Angel's share

The Angel's share describes a phenomenon of winemaking or aging after distillation. A certain portion of a wine's liquid volume evaporates, and escapes from the barrel it is aged in. Disproportionately more alcohol than water will evaporate, thus also reducing the alcoholic strength of the liquid.
