A Bismarck is a type of doughnut with a jelly center instead of a hole.

It is likely that this doughnut is named after the German Chancellor of the second half of the nineteenth century, Otto von Bismarck. A national hero, Bismarck is seen as the father of Germany, and has most likely been rewarded by naming a German pastry after him.
