Encyclopedia : G : GI : GIM : Gimbap
Gimbap is a popular snack or lunch dish in Korea. It is made from rice (bap) and nori (kim, sheets of dried seaweed), and various other ingredients.
The rice is lightly seasoned with and salt, sugar, vinegar. Popular ingredients include bulgogi, spinach, carrots, pickled daikon radish, and egg roll. These and the rice are rolled in laver and then brushed with sesame oil or sprinkled with sesame seeds on the outside surface. After that, kimbap is sliced on regular intervals. It is typically served with kimchi or pickled daikon radish.
Gimbap resembles the Japanese makizushi, but generally has more ingredients, all cooked (usually sauteed and seasoned individually). While the Japanese use raw fish (sashimi), gimbap is made with sauteed beef, sausage or fish cake. Gimbap is not served with wasabi soy sauce or sushi ginger.
Variations include using cheese, spicy cooked squid, kimchi, or tuna as ingredients, or lightly frying the sliced gimbap with egg coating.
