Joe's Shanghai

Joe's Shanghai is a chain of 3 Shanghai-style Chinese restaurants in New York City, New York. Its main location is in Flushing at 136-21 37th Ave., although there are some additional locations such as the one on Pell Street in [Chinatown].
Among other things, Joe's Shanghai has been widely acclaimed for its pork or crab meat soup dumplings (Chinese: Xiao Long Bao), in which the soup is actually inside the dumplings. This is achieved by thickening the soup with gelatin and putting it in as a solid. When the dumplings are later steamed, the solids melt back into liquid soup within the outer dumpling casing.
