Relish

A relish is a cooked or pickled sauce, usually made with vegetables or fruits, generally used as a condiment. It can be smooth or chunky, sweet or savory, hot or mild.

Thus, chutneys and pickles may both be considered relishes. Other relishes include ajvar.

Relish can be mixed with mayonnaise to make tartar sauce.

A famous relish is the Gentleman's Relish, which was invented in 1828 by John Osborn and contains spiced anchovy. It is traditionally spread sparingly atop unsalted butter on thin, hot toast.

Heinz, Vlasic, and Klausen are well known in the United States as producers of pickles and relishes.
