Sterlets and their albinos
The sterlet is a common sturgeon found in aquarist stores. Sterlets eat crustaceans and molluscs and need good water conditions. They may get entangled in plants or blanketweed or other algae. They are very friendly fish, poking their noses out of the water for you to touch. However, they need special food such as TetraPond Sturgeon/sterlet sticks or the food that sturgeon web sells[link]. It enjoys medium size and large ponds.
Starry sturgeon
The starry sturgeon has many names such as stellatus and stellate sturgeon. Like the rest of the sturgeon family it needs special food (see above). It pokes it's nose out of the water a lot (which most sturgeons do excluding the beluga sturgeon). It has a beautiful starry pattern on it's back. It is more beautiful than the diamondback sturgeon. It likes large ponds.
Diamondback sturgeon
This is a sturgeon with bony scutes on it's back. It likes large ponds. It is commonly sold as a sterlet but it is easily distinguishable from one.
Siberian sturgeon and Silver siberian sturgeon
These are very commonly sold as sterlets but have bigger heads. The ordinary siberian sturgeon is blacker and the silver one is lighter.
Beluga Sturgeon
Beluga Sturgeon is a fish eater as well as an insectivore. It will eat fish up to the size of goldfish but fares well with other sturgeon and koi. It is a giant and is not aggressive but is predatory.
Sturgeon Hybrids
The most common sturgeon hybrid is Diamondback x Siberian. There is also Sterlet x Beluga (Bester), Italian x Diamondback, Sterlet x Siberian and Diamondback x Sterlet. They are hardier than their parents. The Bester is the best sturgeon (that's why it's called bester).
